There's not really a LOT that's crazy unique in Ed outside of fringe-time. But they should definitely go to the waterpark at West Ed, and they should see the leg grounds (not leg, short for legislature).
There's lots of great food stuffs, but none that would either be a) allowed over the border, or b) still be fresh (or edible) once it found you in Seattle.
You'll just have to make up here one day on your own.
