when I was somewhere in my teens I asked for and received the Joy of Cooking, and followed their instructions for preparing wild rabbit, which included hanging the carcass for at least 24 hours. my dad loved hunting rabbit but most of the time he gave the meat away due to game meat being the poverty food of his childhood. I wanted the experience of cleaning and preparing something dad had shot (skinning wasn't too bad but wow plucking out pellets is a PITA) . I only did it the one time, but now I know that a) it's possible in an ordinary household and b) hanging really can make a tough beast more tender without making you sick.

What kind of climate did you hang your rabbit in?
(The Faroes are basically a natural refrigerator: temps hover around 40° year round, and no flies have survived the Atlantic voyage.)
